Ukrainian Stuffed Cabbage

It seems like every country in Eastern Europe has its own version of stuffed cabbage. Natalie learned this from her mother, who we think got it from her dad’s mother, who, of course, was Ukrainian. It’s a bit different from the Hungarian stuffed cabbages that I grew up with, but again, Izabella’s mom, Edith, makes Hungarian stuffed cabbages that are different from my mother’s. So it is with regional cookery. In any case, these are delicious.
Ingredients
- 1 pound of ground beef
- 1 pound of ground pork
- 1 large onion, chopped
- 2 cups rice
- 1 head of cabbage
- 2 teaspoons Mrs. Dash (to taste)
- 2 teaspoons salt (to taste)
- 1 teaspoon black pepper (to taste)
Instructions
- Par-cook the rice until it just starts to soften. Drain.
- Boil the cabbage leaves until softened and trim the large vein.
- Mix the meat, rice, chopped onion, and seasonings.
- Fill cabbage leaves with the meat mixture, roll, and tuck the ends in.
- Put cabbage rolls in a large pot with water about halfway up and simmer for 45 minutes, uncovered.
- Then place the rolls in a shallow pan, cover with foil, and bake for 40 minutes at 350°.
- Remove the foil and bake for 20 more minutes to brown.
