Zucchini Salmon AppetizerThis is a quick, delicious, summer appetizer that I came up with. We’re always looking for new uses for zucchini. I will usually make this from the first zucchini off the vine and it celebrates the beginning of the summer bounty.

Quantities are approximate and of course it all depends on the size of your zucchini and how much salmon you have. Seasonings are of course to taste.

Smoked Salmon Basil & Zucchini Appetizer

Ingredients

  • 6 oz. piece of smoked salmon (not lox)
  • 8 oz. whipped cream cheese
  • Garlic powder
  • Paprika
  • 2 small to medium zucchini
  • 12 Fresh basil leaves, sliced into strips
  • 4 oz. roasted red peppers or pimento

Instructions

  1. Shred the salmon with a fork into a small bowl.
  2. Add enough cream cheese to make a spreadable mixture.
  3. Season with garlic powder and paprika and mix well.
  4. Slice the zucchini into 1/4 inch rounds.
  5. Spread with the salmon mixture.
  6. Top with basil and 1 or two pieces of red pepper.

This is a variation of the basic hummus recipe. We usually serve it with whole wheat pita bread triangles that have been brushed with Olive Oil and toasted in the oven. This is a quick, easy, healthy and delicious recipe.

Basil & Garlic Hummus (Variation 3)

Ingredients

  • 2 15 oz. cans Garabanzo Beans (Chickpeas)
  • 2-3 Cloves Garlic
  • 1 C Fresh Basil Leaves
  • Water
  • Juice of 1 lemon
  • 1/2 tsp. Ground Cumin
  • 1 Dash of Cayenne pepper
  • 1 Dash of Salt
  • 2 Tbsp. Extra Virgin Olive Oil

Instructions

  1. Drain and rinse beans.
  2. Put the beans, garlic, lemon juice, basil leaves and spices in a food processor and start blending.
  3. Slowly add just enough water to make a smooth mixture.
  4. Blend very well and slowly add the Olive Oil to the running food processor.
  5. Finish blending and serve.
