Butter Bean Appetizers

I’ve been trying to work more beans into our diet as they are a very healthy source of both protein and fiber. This appetizer was inspired by a Jacques Pepin recipe. It went over very well when I made it for our Friday Night group. It has been made quite often since then.
Ingredients
- 1 15 ounce can butter beans, drained
- 1 tablespoon Dijon mustard
- 2 teaspoons fresh lemon juice
- 4 tablespoons finely chopped red onion
- 3 cloves minced garlic
- 2 tablespoons EVOO
- 1 tablespoon Toasted Sesame Oil
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1 long French baguette
- 3 tablespoons finely chopped chives or parsley
- 2 small jars pimentos
Instructions
- Mix everything but the parsley or chives and pimentos together.
- Use a potato mashes to coarsely mash the beans.
- Spoon onto 1/3 inch thick baguette slices.
- Spread each with a couple teaspoons of the mixture.
- Garnish with chives or parsley and pimento.
