Corn Meal Muffins

I developed this recipe a while back to avoid the excess sugar and trans-fats of the boxed mixes.
Ingredients
- 1 c Yellow corn meal
- 1 c White flour
- 1 c Milk
- ½ c Canola oil
- 2/3 c Sugar
- 1 Egg
- 1 Tbsp Baking Powder.
Instructions
- Mix all ingredients together until just blended. (Do not overmix, batter should be lumpy.)
- Pour into baking cups.
- Bake at 375° until done. (About ½ hour)
Notes
A variation would be to add chopped peppers -- jalapeno, sweet red or whatever you like. You can also sprinkle the tops with grated cheddar cheese before you put them in the oven.
